Food establishments are required to have an employee health policy they can reference when food workers feel sick, and when being quizzed during inspections. Demonstrating knowledge about when to call off or send an ill food worker home is one of the most important jobs a food worker or manager has. Employee health decisions impact the wider community by preventing foodborne outbreaks, loss of wages, loss of employment, law suits, loss of business, hospitalizations, and even death.
